Five detailed cheese profiles with sensory notes
Tasting mats for up to 6 participants
Digital access to exclusive educational materials created by real cheese professionals

THIS MONTH'S THEME: SHEEP
The history of cheesemaking began with sheep’s milk, and so begins our program. Sheep's milk is ideal for cheesemaking due to its unique milk composition, and the resulting cheeses offer complex and beautiful flavors, as sheep’s milk showcases terroir like no other cheese can. This box presents ancient recipes such as Manchego, Ossau Iraty, and Pecorino like you’ve never tasted them before, complemented by modern iterations inspired by the classics.

SHIPPING & DELIVERY INFORMATION:

Why We Love It

WHY SIDE-BY-SIDE TASTING?

DEVELOPING PALATE
By directly comparing similar cheeses, we train ourselves
to discern subtle differences in appearance, aroma,
flavor, and texture.

BUILDING VOCABULARY
Tasting similar cheeses encourages us to articulate
our sensory experience using descriptive language and
better communicate our preferences.

UNDERSTANDING PREFERENCES
Directly comparing similar cheeses helps pinpoint
characteristics we like or dislike.

This Is How You Should Actually Store Your Cheese

"it can take some serious practice to achieve the crisp folds of experienced cheesemongers ... If this seems at all intimidating, Formaticum also makes handy, cheese storage bags where no origami-level folding is required."
